My children 13 and 9 have decided they want to cook once a week so im now going through things that they can start with my son charlie who is 13 is good in the kitchen and has his own ideas and Ellie is just enjoying helping and learning the basics so here was charlies Meatballs and Spaghetti recipe that we put together. For the meatballs
1 lb 1/2 mince beef
1 tsp Dijon mustard
1 tsp mixed herbs
4 cream crackers
salt and pepper
For the tomato and chill sauce
2 tins of chopped tomatoes
half a garlic chopped
half a teaspoon of chill flakes or use fresh red chili
salt and pepper for seasoning
To begin with chop up both the onions and place half the onion into the bowl along with the mince, herbs mustard, egg, salt and pepper, then crush up the crackers and add them in. Time for the messy bit scrunch altogether with your hands till all mixed together.
then make up balls roughly the same size and place them onto a plate and drizzle with olive oil.
Then start your sauce by adding the rest of the onion to a hot pan along with the chopped garlic fry for about 2-3 minutes till slightly soft then add the chili and continue to fry till golden.
Add the two tins of tomatoes and stir gently till all combined then bring to the boil and then turn down to just simmering for about 20 minutes stir from time to time.
whilst this is simmering start with making your spaghetti by boiling your water.
With another pan on high heat begin cooking the meatballs gently in the pan till they are cooked through.
now its time to bring everything together your spaghetti should be just on done and the meatballs should be cooked now add the tomato sauce to the meatballs and gently coat all the meatballs so they all soak up some of those juices for about five minutes then bring altogether and serve.
