I love this time of year when the apples are ready for picking and the hedge rows are full with blackberries ready for picking.
Its one of my favorite combinations Apple & Blackberry and i always make jam but this time i wanted to put it into a cupcake so after a little research on the web i came up with This truly amazing cupcake.
for the cupcakes
5,oz Self raising flour
5,oz caster sugar
2 large eggs
2 tbsp milk
1/2 tsp vanilla extract
2 apples grated to the core
pre heat the oven to 180′ and line a muffin tin with cases
mix altogether as you would any cupcake mixture and add to the baking cases then bake in the oven for 20-25 mins
whilst there in the oven start on the topping
284 ml double cream
1 tbsp icing sugar
blackberry and apple jam soften in a separate bowl with a spoon
whip up the cream and icing sugar and then add to the whipped cream,
when the cakes are done and have cooled down i cut out the middle of the cakes and put a tsp of blackberry & apple jam into the middle then pop the top back on and ice,
I found this a really simple cupcake recipe and will definitely use it again next time.
