Evening all I have been asked if i could share this coffee cake recipe it is my all time favourite and great for when friends come round for tea or if you know someone who loves coffee cake perfect birthday cake too.
4 large eggs
2 heaped tsp coffee
8oz caster sugar
8oz self raising flour
2 tsp baking powder
Start by mixing the coffee with the eggs till combined then add the rest of the ingrediants and mix altogether
Put the mixture in 2 greased 8″ 20 cm tins and pop in the oven for 20 – 25 miniutes at 180c
Take out of the oven and leave to cool for 5 mins then remove from their tins and place on a wire rack to cool completely.
Once they have gone cold you can fill the middle and top with buttercream, I decorated with some coffee chocolate beans I got from Waitrose you don’t have to use them its your cake put what you like on it
FOR THE ICING
6oz icing sugar
1 tbsp milk
1tbsp camp coffee
To make the buttercream add all the ingredients together and beat till all combined
