Apple and Cinnamon Cake

Ive wanted to try this recipe out for a few weeks now but kept on forgetting to pick up cooking apples so i finally got some at the market on the weekend.


I started off by putting all the ingredients into a bowl except for the grated apple and cinnamon and then gave it a really good mix for a few minutes then placed halve the mixture into a deep lined tin and then poured on the apple and cinnamon, leveled it off and then added the rest of the mixture and sprinkled a bit more sugar on top and then a scatter of walnuts popped it into a pre heated oven (180c) for a about an hour and half i did check it just on an hour just to be safe but all was good. i then took it out of the oven and allowed it to cool on a rack.


8oz light muscovado sugar

8oz butter

8oz self raising flour

3 large eggs

2 level tsp baking powder

4oz chopped walnuts

4oz saltanas

14oz cooking apples peeled and grated

1 level tsp cinnamon

To finish

light muscovado sugar and extra walnuts for sprinkling

icing sugar for dusting
