Lemon Cake with a Cream cheese frosting

My Birthday Cake


Birthdays seem to come round so quick as you get older. I was struggling to decide on what cake to make I love chocolate but as we’ve have so much over the christmas break i thought lemon would be much more refreshing.

So here we go

For my Lemon Cake

250g butter

250g Self raising Flour

1tsp Baking Powder

grated zest of 2 large lemons and juice of 1

250g caster sugar

4 large eggs

For the Syrup

juice of 1 lemon

6 tsp of caster sugar

To fill and decorate

1 jar of good quality lemon curd or homemade (roughly around 300g)

100g toasted almonds

grated zest to finish

300g mascarpone

Begin by pre heating the oven to 180′C/fan 170′C 350F

Butter two 20cm round sandwich tins and line with baking discs which you can buy all different sizes to fit all round tins i get mine from Jemma at Iced Jems

I use my food mixer for the next bit

Place the flour and baking powder into a bowl and just mix gently then add your butter, sugar, eggs and lemon zest beat the mixture together and then add the juice of the lemon and give it one more mix (be careful not too over mix).

Divide between the two tins and bake in the oven for 25 – 30 mins until golden and a skewer comes out clean.

Whilst the cake is cooking make the syrup by adding the juice of 1 lemon and the caster sugar and mix together.

When the cake is cooked take out of the oven and gently prick all over with a cocktail stick or skewer and brush on your syrup so it absorbs through the cake and leave to cool completley in the tins before removing.

whist cooling make your toppings in a dry frying pan add your almonds and allow to just go light brown, then put to one side to cool down i put mine on a nice cold plate.

The yummy filling mix together the mascarpone cheese with the lemon curd and then when the cake has gone cold release from the tins and layer up your cake with a big dollop of your lemon cheese mixture to sandwich thew cakes together then coat the top and sides. then grab handfuls of almonds and stick them to the sides of the cake and just smooth the top over and grate some lemon zest all over.

there you go you can use any fruits to decorate the top raspberries would go really well i used blueberries as they are my favourite.
