Charlie’s turn to cook tonight and with a little help from me we made ravioli with a beef and tomato, basil filling.
We stared off with making the pasta which I have to say was fun we got so messy it was quiet funny.
We used 600g OO pasta flour and 6 large eggs, Begin by making a well in the centre of the flour and add the eggs and using your fingers mix until the mixture comes together it will feel very sticky but keep going thats good. Keep mixing and start kneading the dough as you go, it will start to get stretchy and then once your happy with the Pasta dough place in some cling film and allow to rest for 30 mins.
Charlie then started the filling
1lb beef mince
1 onion chopped
1 Garlic chopped
1 tin of tomatoes
Handful of basil
salt and pepper
Begin by frying the onion and garlic in a little olive oil until soft then add the mince and cook until brown, add the tomatoes simmer gently for 10 -15 mins season and add the basil.
Strain off most of the liquid and place to one side this will make the sauce.
Leave your yummy beef mixture to once side till ready.
Now its time for the pasta we used the pasta machine for the first time, we divided the pasta to smallish balls and flatten out a little before feeding the pasta through time and time again until we had lovely thin sheets of pasta big enough to fold in half when filled.
Place your strip on a floured surface and brush some water along the strip at the bottom place your filling onto the pasta leave about two fingers width between each parcel then gently pull the sheets over and seal pushing together make sure you pack tightly so theres no air pockets. Cut out each parcel using a pastry/pasta cutter this will help seal them and place on a floured plate until ready to cook.
Make your sauce by using the left over sauce, we didn’t quiet have enough sauce so we added another tin of chopped tomatoes to the pan and bring to the boil, then add 2 dessert spoons of mascapone cheese. season with salt and pepper.
Be careful with the next bit (hot) place in the blender and blitz till nice and smooth.
Bring a large pan of water to the boil and add your ravioli and cook for around 6 – 8 mins
Place in a serving dish and pour on the sauce and garnish with a little basil.
We all enjoyed it so much, it was great to actually make pasta.
