I created this for something easy to make but not too heavy for the summer
you can add which ever meat you like I did mine with chicken and chorizo only because that needed using up
1 tbsp of oil
1 chopped onion
2 crushed garlic
2 x 400g cans of chopped tomatoes
good handful of chorizo
3 chicken breasts sliced
a big bunch of basil
Begin by heating the oil in a big pan on the stove then add the onion and fry for a few minutes until just soft then add the garlic and continue to fry for 5 more mins.
Add the chicken and cook till browned and cooked through 10 -15 mins.
then its time to add the courgettes and carrots and continue until they are starting to soften.
pour in the tomatoes and fill 1 can back up with water and pour in add the chorizo and a good handful of basil and season with salt a pepper bring to the boil then reduce the heat and allow to simmer for 20 mins or so till your ready to eat.
Great meal to put together in the morning then just heat up before ready to eat
