Strawberry and Rhubarb Puddings

Theres a lot of strawberries around this year along with the rhubarb as the weather has been really good so we have to make the most of what we have got while it lasts. And i think these two go so well together the sweet and sour works so well.

I have these great strawberry baking cups from Jemma over at Iced Jems Here. Thought they would make perfect little cups for my puddings.

So I made my usual roasted and strawberry recipe and placed the mixture into the cases and cooked for 20-25 mins and it worked a treat


Recipe for roasted rhubarb and strawberries

550g rhubarb sliced

85g caster sugar

250g – 300g strawberries hurled and halved

Roast the rhubarb with the caster sugar in a preheated oven at 180’c fan 200′ conventional for 15 mins then add the strawberries for a further 5 mins or until slightly soft and tender.

Then allow to cool for 10 mins then add to your selected dish or like me baking cups.

For the crumble mixture

150g plain flour

30g almonds ground

50g golden caster sugar

50g butter

Rub the flour almond and butter together until it forms breadcrumbs then add the sugar.

Top the fruit with this crumble and bake in the oven for around 20-25 mins

I use this crumble mix for most things I find its a good mix but if you have your own use that instead.
