Coffee and Walnut Cupcakes

This is an all time favourite of mine and its a trusty Mary berry recipe so works really well.

And what better way to treat yourself

Makes 12 cupcakes

Ingredients

1tbsp instant coffee granules

1tbsp boiling

115g soften butter

140g caster sugar

140g self raising flour

2 tbsp milk

2 large eggs

25g walnuts chopped

For the Coffee Icing

2 tsp instant coffee granules

2 tsp boiling water

100g butter at room temp

225g icing sugar

12 walnuts for decoration

Turn the oven on to

fan 160’C conventional 180’C Gas 4

Start by putting the coffee granules and boiling water in the bowl and stir till all mixed then add the rest of the ingredients and mix altogether till you have a smooth bater texture, Pop into your cases and bake for around 20 -25 mins

To make the butter cream

put the coffee granules and boiling water in the bowl and mix till smooth then add the butter and icing sugar and using a free standing mixer or hand held mix for a good few minutes till all smooth. Once your cakes are cool ice the butter cream on and decorate each one with a walnut.

All thats left is to enjoy them with friends and family.
