Sausage and Bean Stew

This can either be a winter meal or summer which I love sausages you can pick up really easy and you can spend how much you like the good thing is of all the flavours there are out there these days, I used cumberland only because thats my favourite

you will need

8 of your fav sausages

1 tbsp olive oil

1 medium onion chopped

1 Large carrot chopped

1 celery stick chopped

1 red pepper chopped

1 chicken stock cube

2 x 400g tins of chopped tomatoes

1 400g tin of cannelloni beans drained

1 tbsp of tomato puree

1 bay leaf

1 tsp oregano or a stalk of fresh oregano

To begin

Pre heat the oven to 180’c /200’c gas 6

Brown the sausages in a casserole pan for 10 minutes then remove and cut up into chunks.then bring to the hob and with the juice from the sausages add some oil and add the onions,carrot,celery and pepper and allow to soften cook for 10 mins.

Dissolve the chicken stock in a mug with boiling hot water and add to the pot mix then add the tomatoes along with tomato puree and Cannelloni beans, oregano,bay leaf and a good pinch of salt and pepper. Bring to  simmering and cover with a lid and place back in the oven for 30 40 mins.

I added tagliatelle to mine but for a winter dish add mashed potatoes.

Tip

If you don’t have a casserole pan that can go in the oven and on the hob cook up the sausages separately and the rest in a large pan on the hob then add to a casserole pan for the last stage.
