We have not had curry for a while and i really wanted to try this recipe out its a little from Mary berry and Jamie Oliver combined and here is my take on it.
To get started you will need,
- 1 tbsp of oil
- 1 onion sliced and diced
- 3 chicken breasts cut into strips/cubes which ever you like
- 1 tbsp plain flour
- salt and pepper
- 1 clove of garlic sliced and diced
- 1 tbsp fresh red chilli
- 1 tbsp fresh ginger
- 1 tbsp ground cumin
- 2 tbsp curry powder
- 1 tbsp turmeric
- 400ml chicken stock
- 1 can of chick peas
- a good handful of curry leaves you can get them in most good veg shops if you can’t find any just leave out
- 1 can of chopped tomatoes
- 150ml double cream
Now you have all your ingredients
start by coating the chicken in the flour and salt and pepper and browning off gently in a little oil till all sides are sealed,
then take out and put to one side.
fry the onions off in a little more oil until they are soft then add the garlic, Ginger and chilli cook for a few more mins.
Now add the cumin , turmeric and curry stir altogether and then add the chicken strips and make sure all the chicken is coated with the mixture in the pan.
add the chicken stock and tomatoes along with the chick peas and cook altogether and bring to the boil then add the cream.
Allow to simmer for 30 – 45 mins make sure it does not dry out so keep an eye on it,
once cooked serve with your favourite rice and enjoy
