Coconut is Mr Yummy bakes Favourite so I made this hoping it would have enough coconut inside as he always says that he can’t taste it He’s very hard to please on this, But as he says this is the best cake so far so for now that will have to do until we find another recipe
You will need
4oz Soft butter I use Stork
6oz Caster Sugar
2 large Eggs
60z desiccated coconut
1 level teaspoon of Baking Powder
8oz Self Raising Flour
2 tablespoons of Coconut Milk
Pre heat the oven to 180ºc /fan 160ºc Gas 4
lightly grease a 1 lb loaf tin or two 1 lb loaf tins line with baking paper
Measure all the ingredients into a mixing bowl and mix for a good few minutes till all blended together spoon the mixture into the prepared tins.
Bake in the preheated oven for around 30 -40 minutes depending on ovens check when its nice and golden and when you insert a skewer it comes out clean then its cooked.
Leave to cool in the tin for around 5 minutes then take out of the tin and peel the baking paper off and allow to cool on a wire rack.
Once completely cold you can either have it plain or you can add a good dollop of jam on top and smooth over then sprinkle with desiccated coconut your choice
