This is a lovely lemony cookie with a hint of coconut I love this to go with my coffee.
200g unsalted butter
220g caster sugar
1 medium egg
175g self raising flour
110g desiccated coconut
zest and juice of half a lemon
Preheat the oven to 160’c gas mark 2 1/2
cream the butter and sugar together in a free standing mixer or hand held, Mix until light and pale then add the egg mix until combined.
turn the mixer down to low and add the flour and coconut evenly then add the lemon zest and juice beat until all combined. once your dough starts coming away from the bowl stop the mixing and turn onto a worktop if the mixture is still a little wet add a couple of extra tablespoons of flour to the dough until it becomes a nice smooth dough then divide into 2 and place onto some cling film and shape into a sausage shape Chill in the fridge for a good hour
Then when ready cut the amount of cookies you want and bake in pare heated oven for around 20 mins or until golden. remove from the tray onto a cooling rack and enjoy.
you can store the uncooked cookie dough in the fridge for 5 days in the fridge or 2 weeks in the freezer this recipe will give you a good 30 cookies
