Apple & Blackberry Cake

225g soft butter
225g soft light brown sugar
3 large eggs
225g self raising flour
2 level tsp of baking powder
400g cooking apples peeled core removed then grated
100g blackberries
To finish a dusting of icing sugar
Pre Heat the oven to 180’c /fan 160’c
Line and grease an 8inch deep baking tin.
Measure the Butter, Sugar, Eggs, Flour and baking powder into a free standing mixer or hand held and beat for around 2-3 minutes until all combined.
Place half the mixture into the bottom of the prepared baking tin then lay all the grated apple along the top of the mixture in the tin level as much as you can then dot half the blackberries all over then finally add the remaining cake mixture on top of the blackberries and apple then finish off with the remaining Blackberries

cook in the oven for around 50-60 minutes take care not to let the top burn if it starts turning place some foil over the top to protect your cake may need longer just check with a skewer if it come out clean its done.
Then when cooked leave in the tin for around 5 mins then remove and place on a wire rack to cool completely you can serve this with custard which goes very well or on its own with a good dusting of Icing sugar.
