Beef Casserole

Beef casserole is an all time favourite of mine and I must have dumplings as well its the perfect meal for cold dark nights now a lot of people I’m sure make this I thought I would share mine with you.

You will need

1 1/2 lbs of diced beef

salt and pepper

2tbsp plain flour

2 carrots roughly chopped

1 large onion sliced

Half a Swede chopped

3 parsnips chopped

2 large potatoes cubed

1 beef casserole mix

1pint of beef stock

2 strips of tyhme

for the dumplings

4oz self raising flour

1/4tsp salt

2oz suet

1tbsp fresh parsley or 1/2 tsp dried herbs

3 to 4 tbsp of water

Begin by mixing the flour and a good pinch of salt and pepper then coat the beef in the flour until nice and coated. then in a heavy based pan seal the meat till lightly golden.

Then add to a big casserole pot along with all the vegetables.

Now time for the stock and casserole mix yes I know you probably think its cheating but for 50p it adds lots more flavour and its not going to hurt I add this like the packet instructs me then add a beef oxo cube to 1 pint of boiling water and mix till dissolved add both of these to the beef and vegetables and mix altogether.

Place in the oven at 160′ with a lid on for 21/2 to 3 hours longer left the more tender the meat goes.

For the dumplings add the flour, salt, suet and herbs to a big bowl and combine together then add the water a little at a time till you have a nice sticky mixture not to sticky but enough to make balls out of i usually just add a little more flour to it to bring together.

Make 8 balls and then when ready add to the casserole for the last 20 mins.
