Mini Cranberry and Orange Muffins

This is a fantastic recipe I have made two lots already and I’ve put some in the freezer to give in my little hampers for christmas I got some great little baking cases from Iced Jems shop which are so cute and I was determined to find something to make so whilst out and about I picked up some cranberries Whitworths cranberries no less.


And this is where I found this yummy recipe on the back of the packet.

This recipe makes 24 mini muffins and only takes 10-15 mins and cooking time is 12-15 mins so perfect if your in a hurry.

You will need

150g self raising flour

1/2tsp baking powder

75g caster sugar

50g whitworth cranberries

grated rind of 1 orange

100ml of natural yogurt

1 egg beaten

50g melted butter

To make

Pre heat your oven to 180’c place 24 baking cups or mini cake cases/petits fours cases into a mini muffin tin or if you have not got one a baking tray will be just as good.

Place the flour,baking powder,cranberries,sugar and grated orange into a bowl mix well.

Mix the yogurt,egg and melted butter together then stir into the dry ingredients just enough to combine the mixture.

Spoon into your case and bake in the pre heated oven for 12-15 mins

Once baked and golden remove from the tin and allow to cool on a wire rack or if your like me and can’t wait have one just for testing mind

If you’re going to freeze these place parchment in-between them and seal tightly.
