  • 150g light brown sugar
  • 120g golden syrup
  • 250g oats
  • 100g bran flakes crushed
  • 150g raisins
  • 50g apricots
  • 50g coconut

Instructions

  • Preheat the oven to 180’c and using a good sized square tin I use my brownie tin.
  • Place your sugar, syrup and butter in a sauce pan on a low and heat gently till all melted.
  • in a separate bowl add the flour, oats and crushed bran flakes give a good stir and then add all your dried fruit and coconut and mix, then your ready for your melted butter mixture combine altogether with a wooden spoon then tip into your prepared tin and bake in the oven for 25 mins once cooked take out of the oven and leave in the tin, I score my flap jack with a sharp knife whilst its in the tin then leave it till its gone cold before taking it out.

Notes

  • If you don’t like coconut leave it out or if you want to swap apricots with something else you can like cranberries, you put in what you like i often have changed the fruit combination around. it works every time.
