Sausage Hotpot

This went down really well with my lot its real comfort food especially after a busy cold day it was really easy to put together and then the oven takes over and does the rest what more can you ask for.

You will need

Enough sausages to feed you and your family use your favourite. I used cumberland

2 tbsp oil

1 clove of garlic crushed

1 leek chopped

1 stick of celery sliced

1 carrot sliced

1 tin of chopped tomatoes

200 ml chicken stock

1 bay leaf

A good tablespoon of Worcestershire sauce

2 medium baking potatoes peeled and sliced finely

Begin by preheating the oven to 180’c fan 160’c

Heat a large pan on a medium heat with the oil and brown the sausages for around 4-5 mins, and put to one side.

In the same pan add the celery,carrots,leeks and cook for 5-6 mins then add the garlic and cook for another 2 mins.

Add the chopped tomatoes , stock, bay leaf and Worcestershire sauce, bring to the boil and then simmer for 5 mins until its thicken slightly,

Place the sausages into a casserole pot along with the sauce then arrange the sliced potatoes around the top brush with a little oil and cook for around 45 mins to an hour or until your potatoes are cooked and golden.
