Cod with Lemon Tarragon and créme Fraîche


This is a recipe from my lovely new cook book I’ve got Nigel Slater eat I have to say the recipes are so quick and easy to put together especially when your on the drag and you don’t think you have time.

I love fish and we don’t seem to eat enough of it as a family but I got some nice cod from the supermarket (Asda)

All you need

350g  cod fillets or enough for how many your feeding

juice of 2 lemons

40g butter

Small bunch of tarragon chop in half

1 bay leaf

6 black peppercorns

a teaspoon of cappers

3 tbsp créme fraîche

Now add your cod to a pan along with the juice of the lemons and butter and half the tarragon, bay leaf and peppercorns. bring to the boil then lower the heat and add a lid and leave for 10 mins. remove the fish and keep warm

Add the rest of the tarragon along with the capers créme fraîche Nigel says this will turn a little grainy from the lemon juice so don’t worry.

I did mine with freshly dug charlotte potatoes and green spinach and beans from my garden.
