Oat Berry Crumble

I have lots of frozen berries that needed using up from last summer in the freezer and theres something about warm summer berries they transport you right back to summer with every mouth full. Even if you don’t have frozen berries you can use fresh berries which taste even better.

Ingredients

  • For the crumble
  • 100g Plain flour
  • 50g rolled oats
  • 100g butter
  • 50g caster sugar
  • For the Fruit Filling
  • 350g strawberries halved
  • 100g caster sugar
  • 400g mixed berries mine were raspberries,blackcurrants and blackberries if frozen defrost first

Instructions

  • Begin by preheating the oven to Fan 180’C conventional 200’C and lining a baking tray with parchment for your crumble mix. Now begin making your crumble, by putting all the ingredients into a bowl mix altogether I did cheat and put mine in my food processor using the blade attachment as if you were making crumble.
  • Don’t worry that it doesn’t look too much like crumble as it clumps together once you reach that stage tip out on to your ready prepared baking sheet and spread out evenly then bake in the oven for 10 mins mixing it halfway i just used my folk to break any big clumps up and you will find they start crisping up nicely if you feel they need longer in the oven till more golden go with what your instinct, Allow to cool on the baking tray.

Now for the fruit filling put the strawberries and sugar in a heavy based pan and allow to bubble up and the sugar to dissolve then add your other berries and bring to the boil and allow to simmer gently for around 10 mins then once your happy. If you have a lot of juice, sieve the juice from the berries before placing them into you’re baking dish that way it won’t be too full of juice I added about 2 tbsp of the juice to the berries in the baking dish then top with your crumble and bake in the oven for 15 – 20 mins or until bubbling hot. I served mine with vanilla ice cream but you could use custard or clotted cream whatever takes your fancy, I did take the reserved juice to the table so if they wanted to add more lovely juice to their
