I love American Pancakes with crispy bacon and maple Syrup and its a lovely family treat for the weekend.
In a large bowl mix altogether
225g plain flour
1tbsp baking powder
pinch of salt
1tsp of caster sugar
Then melt 30g of butter in a small saucepan leave to cool for 5 minutes then add 2 large eggs and 300ml milk add the wet mixture to the dry mixture and using a hand held or free standing mixer mix for around 5 minutes until all combined and like a batter mixture.
Get a medium sized pan and place on a medium heat and I use a ladle spoon round circles of mixture not too big and leave to cook once bubbles appear on the top side flip over for a few minutes then they are ready.
Then you have the fun bit of adding your choice of flavouring Yoghurt and banana is Ellie’s favourite. And Charlie likes the maple syrup but the choice is all yours.
