Galaxy Cupcakes

I love my Galaxy cupcakes and I’ve been making them for the past two years but I’ve discovered this really yummy chocolate cupcake recipe from my lovely friend Beverly Something about cupcakes

So I made my galaxy cupcakes using this fool proof chocolate cup cake recipe which i can’t go back now as they are so yummy you will love them too.

This makes around 12-16 cupcake

70g butter (I use stork)

250g caster sugar

170g plain flour

50g cocoa powder

1/4 tsp salt

1 tbsp baking powder

2 large eggs

210ml semi skimmed milk but you can use whole milk

12 chunks of galaxy chocolate

For Icing and decoration 100g Bar of Galaxy plus extra for decoration

preheat the oven to 170′c

Start by placing the flour,salt baking powder,sugar,cocoa and butter into your mixer using the paddle attachment mix until you have a sandy mixture, then add the eggs to your milk and slowly add it to the mix and beat until its all combined and like a yummy chocolate batter it will look quiet runny but don’t worry its all good.

Then pop them into your baking cases and place chunk of galaxy into each one don’t push them down too much as they will sink right to the bottom and bake for around 20-25 minutes

then allow to cool for 5 minutes in the tin and then pop them onto a cooling rack.

To make the Galaxy buttercream

1lb of icing sugar

150g lurpak butter unsalted

2 fl oz milk

100g melted galaxy chocolate

Start by melting the chocolate and then leave to cool slightly

Add the icing sugar, butter and milk to the mixer and cover with a large Clean tea towel so you don’t end up with icing sugar everywhere Mix for around 10 minutes then add the melted chocolate and combine till all mixed together. Now your ready to ice your cupcakes and decorate with some Galaxy chocolate on top.
