My Kitchen vegetable garden has been doing very well this year with a bumper crop of courgettes (Round Variety)and tomatoes along with a really good herb garden its great when you can go out to the garden and come back in with homegrown delights to cook with, I love cooking with my produce I have grown theres something so satisfying
So Heres something yummy for you to make you will need 2 roughly big courgettes if not and you can get hold of marrows this will work well with them too.
To make the sauce and mince to fill the courgettes
1 carrot roughly chopped
1 clove of garlic crushed
1 onion chopped finely
I used my own home made tomato sauce but you can use 1 can of tomatoes
salt and pepper
1 tbsp tomato puree
fresh oregano few stalks or 1 tsp dried
the inside of your courgettes roughly chopped
1 lb 1/2 Beef Mince
Begin by frying off a little oil with the onions, garlic and carrots until soften. then add your tomato puree and tomatoes stir altogether then season with salt and pepper add your fresh oregano and courgette and bring to the boil then simmer for 20 mins
whilst this is simmering I cook the mince in a little oil once all browned add it to your sauce then once all combined pour into your open courgettes and place there little hats back on and place in a preheated oven 180′ for 20\25 mins
I served mine with rice but you could use bread.
