I love this in my overnight oats its much cheaper to make than buy and tastes better, This is from Madeleine Shaw’s Book Get The Glow if you have not got it then I highly recommend you do. Its changed my way of thinking about food and my understanding of food. Heres a link to her blog
Heres the coconut milk recipe from her book.
100g dessiccated coconut
150 ml water boiled and cooled in the fridge
150 ml cold water
pinch of salt
Put all the ingredients into a blender. Blend for 4 mins, then strain through a nut bag or a piece of muslin. Squeeze the cloth to extract all the milk.
This will keep for a week in the fridge.
