Homemade Granola Bars

These are in the Deliciously Ella Book which I have adapted slightly,  I do love her book there are so many recipes that I want to make and they are super healthy too.

You will need

20 dried figs

100g sunflower seeds

100g pumpkin seeds

200g raisins

240g oats

3 tbsp chia seeds

2 tsp cinnamon

Preheat the oven to 180’c fan 160′

Place the figs into a pan with 600 ml of boiling water and allow to simmer for 5 mins until soft. Once done allow to cool slightly.

Whilst your figs are cooling add the sunflower seeds, pumpkin seeds, raisins and oats to a bowl and mix altogether.

Now your figs have cooled add them to a blender along with the chia seeds and cinnamon whiz up until smooth,

Pour over the dry ingredients and mix until all combined, then pour into a 12 x 9 inch tin (roasting tin) greased with a little coconut oil.

Place in the oven for 30 – 40 mins after 20 mins take out of the oven and cut your slices with a knife then put it back in the oven for the rest of the time.

Take out of the oven when its done and allow to cool in the tin for a bit then place to continue cooling on a wire rack once completely cold put them in an air tight container.
