Now I’ve made this a few times now and once you have made these you will never buy ready made ever again,
You will need
150 g Stale bread
1tsp Black peppercorns
1/2tsp Smoked paprika
1/4tsp Crushed chilli flakes
3 Chicken breasts thinly sliced into bite site portions
2 tbsp Flour
1 Egg beaten
3-5 tbsp Sunflower oil
Lemon Wedges to serve
For The Lemon Mayonnaise Dip
4 heaped tbsp Mayo
1 Lemon Zest and 1 tbsp of Lemon juice
To begin pre heat the oven to 160’c fan 140’c spread the bread on a baking sheet and bake for 20 mins or until crisp and dry and turn halfway through cooking, Once they are done allow to cool slightly then break up and place them into a food processor with a metal blade. Add the peppercorns,chilli, paprika and salt and blitz till you have fine crumbs. Put into a bowl and put to one side.
Now prepare your chicken lightly flatten between cling film with a saucepan.
In one bowl add your egg and beat, then put your flour onto a plate now you have everything you need to prepare.
Place each piece of chicken in flour then egg then breadcrumbs and put on a plate ready for frying. Do this for them all.
Then in a non stick frying pan add your oil and heat gently then fry them for 2 mins on each side so they are golden and press down with a fish slice to make sure contact is made with the pan. Repeat for all if you need to add more oil do so before adding more and wait till its hot and then you can go again.
To make the mayo add all the ingredients together and mix up with a spoon and chill before serving with your Chicken Goujons.
I did chips with mine and salad but you can put them with anything you love.
