Healthy fruit muffins

Ive been thinking about these for a while how to make something healthy and using up fruit and a great way to save waste.

I was inspired by a few recipes out there so I’ve come up with this one. Its light full of flavour and the best bit you can add whichever fruit you want so you can adapt it to suit you and your family.

This made 14 -16 Muffins

130g Wholemeal Flour

70g Self raising Flour

80g oats

1 tsp Baking powder

1tsp Bicarbonate of soda

45g Raisins

45g Dried apricots

1 Mashed very ripe banana

1 Peach or Nectarine chopped

200ml Milk

2 Eggs

80g unsalted butter melted

Topping

30g Oats

3 tbsp Demerara sugar

Pre heat your oven to 180’c gas mark 4 and line a muffin tin the paper cases and place to one side.

Place both flours, bicarbonate of soda, baking powder, Oats, dried fruit, peach or nectarine and mashed banana into a bowl and milk altogether, In a separate jug pour in your milk and eggs and mix well then add your melted butter then make a well in your dry ingredients and add this to it string well to combine do not over mix once all combined add it to your cases 2 thirds full. Mix your oats and Demerara sugar together in a separate bowl and sprinkle over each muffin, Then bake in the preheated oven for 25 mins until golden brown once they are ready allow to cool on a wire rack  and eat just warm or allow them to go cold perfect for breakfast or a mid morning snack.
