Spatchcock Summer Chicken and seasonal Vegetables

I love Chicken in the summer time you can do almost anything with it to suit you and your family,

I use different herbs or marinades whichever you fancy, this time round i used fresh herbs from my garden Lemon verbena, lemon mint, basil and lemon thyme along with 2 tbsp of butter i chopped the herbs and added to the butter along with salt and pepper and mixed altogether. then making a little pocket between the breast and skin of each chicken breast i stuffed the butter mixture inside then using up any butter mix using your hands rub all over the chicken. then season with salt and pepper and place in a roasting tin ready to go into the oven.


Now prepare the Vegetables by roughly chopping them Β I used 2 courgettes out of my garden along with 1 aubergine, 3 carrots, 1 onion, 1 pepper red or yellow then enough new baby potatoes halved place all in a shallow tin season with salt and pepper along with a good drizzle of olive oil and give it a good mix using your hands then level them all out, and that is that how easy.

Your Chicken should take no longer than an hour as when its spatchcock it makes the cooking time shorter

Now for the vegetables will take around 30 mins so when your ready place in the oven at around 180’c fan

so all you need to do is sit back with a glass of something you fancy and enjoy the sunshine.

And when you sit down with your family to eat this you know your giving them something really good.
