Tuna Pasta

This was a very quick family dinner as we had been out for the day and I forgot to get anything ready before hand.

So after a quick search in the cupboards and fridge. I find if you have a good store cupboard you can almost make anything.


So you will needΒ 

2 Tins of Tuna

Pasta enough for how many you are feeding

500g Passata sauce or homemade tomato sauce

1tbsp Olive Oil

1 Onion

1 Clove Garlic crushed

Fresh herbs I used basil,thyme and oregano

2 Courgettes roughly chopped

1 red pepper roughly chopped

Salt and Pepper

Cherry Tomatoes


Start by putting your oil in a pan on the stove then add your onions and garlic and heat gently till soften.

Then add your passata and heat through for 5 mins then add your courgettes and pepper along with the fresh herbs and season with salt and pepper and allow to simmer on the stove for 15 mins till all thickened up and the vegetables have gone soft.

Mean while cook your pasta and get your tuna ready. Once the pasta is cooked through drain off and add to the tomato sauce and mix well then stir in the tuna and then tear up your mozzarella and scatter all over the top, along with the Cherry Tomatoes.

Serve with a fresh salad.
