Banana & Raspberry Bread with a hint of Coconut

Ive always got lots of bananas in the freezer, I never throw them out as soon as they turn brown I put them in their, perfect for a quick banana loaf recipe like this one.

I used coconut Alpro with this too as I don’t drink normal milk anymore.

Recipe

Serves around 8 people

300g Plain Flour

1/2tsp Salt

1tsp Bicarbonate of Soda

4 tbsp Desiccated Coconut

200g Golden Caster Sugar

100g butter soft

4 ripe Bananas mashed

2 eggs

100g raspberries

100 ml Coconut milk Alpro

Start by pre heating the oven to 180’c fan 160’c gas mark 4

Grease and line a 2lb loaf tin and place to one side.

Place your flour, salt, bicarbonate of soda and coconut into a bowl and give it a good stir, then add your raspberries and make sure they are coated in the flour this will help them not to sink when cooking.

In a separate bowl beat together the sugar and butter till light and fluffy.

Place your bananas, coconut milk and eggs into a big jug and mix altogether till you have a lovely thick mixture.

Now fold your wet mixture with your dry until its all incorparated then when ready pour into your prepared tin and bake in the oven for around 30 – 40 mins may take a little longer if so pop some foil on top of your loaf till cooked through so it does not burn. Your loaf should be golden brown and when a skewer is inserted it should be clear of any cake mixture.
