Beef Stew with Apricots Madeleine Shaw Style

This is one of the first meal recipes I’ve made from Madeleine Shaw’s book Get The Glow, It was so good and really easy to prepare and cook great for all the family.

You will need

500g stewing beef organic is preferred but I did use my local beef from my butcher

1 tbsp ground cumin

1 tsp paprika

1 large white onion chopped

2 tbsp coconut oil or butter

1 red pepper chopped into cubes

100g dried apricots chopped I did use fresh as thats all I had left and they worked really well

1 can of chopped tomatoes

3 tbsp tomato puree

salt and pepper

Begin by rubbing the meat with the cumin and paprika and a pinch of salt and pepper and place to one side.

Fry your onions in half of the coconut oil till golden then add the peppers along with the apricots, puree and tinned tomatoes.

In a separate pan using the remaining coconut oil brown your beef on all sides for 1 minute then add to your tomato mixture and give it all a good stir, Then leave it for a good 2 hours to cook slowly on the hob. I did check mine from time to time to make sure it did not dry out if you feel it is add a little boiled water to it to loosen it up but not too much.

I serve mine with cous cous which I find a great alternative to rice.
