My Smokey chicken & Bean Stew

I love meals that have little prep and then the stove or cooker does the rest and this recipe is perfect for a lazy afternoon or a busy day where you want to have something yummy and warming without the fuss of spending hours in the kitchen.

you will need

olive oil

1 large white onion roughly chopped

4 rashers of smokey bacon roughly chopped

2 to 3 breasts of chicken (cubed) you could use chicken thighs x8 with the skins removed if you wanted something a little cheaper

1tsp smoked paprika

2 tins of chopped tomatoes

250ml barbecue sauce

1tbsp mixed herbs i used fresh (rosemary, thyme, sage) from the garden but you could use dried if easier

2 cans of pinto beans

tortilla wraps

grated cheese

Start by adding a little oil to a heavy based pan that has a lid, then add your onions and bacon on a medium heat till the bacon is crispy and the onions are browned.

Then place your paprika to the pan and coat well, Now add your chicken and make sure it is thoroughly coated in the bacon, onion and paprika mixture and continue to cook for a further 5-10 mins on a medium to high heat.IMG_3964

Turn the heat down and add both tins of tomatoes plus half a tin of water, along with the bbq sauce and herbs, and a pinch of salt and pepper.

Make sure everything is combined and the chicken is covered in the sauce mixture let it all simmer nicely together.

Now cover with the lid and allow to simmer for 45 mins to an hour. When theres half an hour left to go add your pinto beans to the pan and mix in. Prepare some grated cheese and warm through some tortilla wraps. You could serve this with some rice if you wanted or chunky bread your choice.
