Christmas Chutney

I love christmas chutney it goes so well with cold meats and cheese after the big day.

Ive been using this recipe from nigellas christmas book for years I’ve adapted it to my own over the years so here is my tweaked version.

You will need

800g cooking apples pealed and cored, chopped small

1 medium onion chopped

350g cranberries frozen will be fine as long as defrosted before using

250g pitted dates chopped into 3

150g prunes chopped into 2

1 orange zest, pulp and juice

400g caster sugar

1/2 tsp crushed cloves or ground

11/2 tsp ground ginger

1/12 tsp cinnamon

1/4 cayenne pepper

500ml white wine vinegar

1 tsp salt

Put the apples, cranberries, onions, dates, prunes into a large pan.

Zest the orange and add the pulp and juice over the top. Add the sugar, cloves, ginger, cinnamon and cayenne pepper.

Pour over the white wine vinegar, and sprinkle the salt and then give it a good stir.

Bring to the boil then turn down and simmer without a lid for an hour or until you have a lovely jammy like mixture.

Put into warm sterilised jars, I got 5 x 450g jars full out of this mixture.

This keeps really well and the longer it has to mature the better it tastes.
