This is an inspired meal from Jamie Oliver Save with Jamie cook book. I’ve seen him cook a meatloaf and thought how great that would be for the family. Ive tweaked a little to what we like and added my own vegetable tomato sauce which is great for getting the kids to eat veggies without them knowing. So a big win and I find you can add as many different vegetables as you like as if you choose to blitz them they will never know LOL. Now this meatloaf does not look very big I know its because I was doing the kids one and hubby and mine separate as he was working. Its in the recipe below so don’t panic.
You will need
500g pork mince
100g bread crumbs
1 tsp oregano
40g feta cheese
salt and pepper
For the Tomato Sauce
2 celery sticks
2 tins of chopped tomatoes
1tbsp tomato purre
300ml vegetable stock
salt and pepper
good grating of cheddar cheese
spaghetti or any over pasta you like
Pre heat the oven too 180’c
Place your pork mince, breadcrumbs, egg, feta cheese, oregano and salt and pepper to a large bowl and mix together with your hands. Make into a sausage shape I made two sausage shapes as was doing the kids first before ours. But you can just do one long one it does not have to be to thin just thick enough for you all to have a good chunk. Place into a roasting tin and drizzle with a little oil. put to one side and prepare your sauce.
Begin by placing your carrots, onions, celery and garlic into a food processor and blitz.
Then add to a large pan with a little oil and cook gently for 5-10 mins then add the tomato purre and oregano give it a good mix.
Add the tomatoes and stock bring to the boil then simmer for 20 mins. Then add to a blender (if you prefer a smoother sauce) if not skip this part. Blitz for a minute or two then place back into your pan and place back on the hob to simmer gently till your meatloaf is cooked.
Now add your sausage shape meatloaf to the oven and cook for 25 – 30 mins once cooked take out of the oven and cover your meatloaf with the tomato sauce along with a good grating of cheddar cheese and place back into the oven for another 5 mins or just long enough for the cheese to melt and the sauce to be bubbling.
I serve mine with spaghetti but you can use what ever suits you.
