I love this time of year where we get to eat homemade stews and soups and this is one of my all time favourites and it’s really good for you, Butternut squash soup,
You will need 1 large butternut squash cut in half and seeds removed
salt and pepper
a splash of olive oil
600 ml of veg stock
Pre heat the oven to 180’c and place your butternut squash onto a baking sheet sprinkle with salt and pepper and a drizzle of olive oil and roast for around 30 – 40 mins or until soft,
Then allow to cool for five mins then scoop out the flesh from the skins and place in a blender or food mixer along with the veg stock blitz for 5-10 mins.
Then you have this beautiful orange butternut squash soup.
This soup freezes very well too so great to make a big batch and freeze for later.
