This was lovely warming stew for when you’ve been busy all day and all you want is some comfort food. This is very simple to put together you can do it the night before if time is not great for you that way all you have to do is pop it in the oven and allow it to cook slowly.
you will need
1tbsp of olive oil
4 lamb steaks roughly diced
2 onions sliced
4 parsnips roughly chopped
3 carrots roughly chopped
350ml of red wine
1 x 440g tin of chopped tomatoes
1 tsp thyme
1 tsp rosemary
250 ml vegetable stock
creamy mash potato, new potatoes or rice
Begin by heating a large pan with the oil and add the lamb to the pan and brown gently all over season with salt and pepper.
Once done remove from the pan with a slotted spoon and put to one side, in the same pan add the onions and fry gently till they are tender and golden, for around 15 mins.
Now you need to add it all to a large casserole dish place all your vegetables, stock, wine herbs and tomatoes to the dish stir altogether then place your diced lamb in last then cover with the lid and cook in a pre heated oven at 160’c for around 2 – 2 1/2 hours.
How simple is that now all you need to worry about is what to put with it mash, boiled potato or rice your choice.
