Beef Stir Fry with ribbon Vegtables

Beef stir fry this was a really easy and simple recipe to follow and cook and perfect for the mid week meals.

Beef stir fry with ribbon vegetables

Printable Beef stir fry

Serves 4- 6

350 g rump or sirloin steak cut into thin strips

1 tsp Chinese five spice powder

6cm fresh root ginger grated

4 cloves of garlic

2 small courgettes

2 carrots

125g medium egg noodles

4 spring onions sliced

175g-baby sweetcorn

100g mangetout

50g bean sprouts

3 tbsp soy sauce

2tbsp fish sauce

Juice of 1 lime

Salt and pepper

2tbsp oil


Start by tipping the beef into a large bowl and add the five spice, garlic, ginger and a good pinch of salt and pepper gently toss altogether so it coats the beef. Put to one side to marinate for at least 30 mins.

Meanwhile prepare the courgettes and carrots using a vegetable or julienne peeler to cut the vegetables into thin strips.

Bring a pan of salted water to the boil and cook the egg noodles according to the packet instructions.

Heat half the oil in a wok on a high heat and fry the marinated beef strips for 3-4 mins so they are nice and brown but still pink in the middle. Then remove from the pan using a slotted spoon and put to one side.

Add the remaining oil to the pan followed by the sweetcorn, spring onions and mangetout and fry for 1 minute, tip the courgette and carrot strips and stir fry for a further minute. Add the bean sprouts and drained noodles with the soy sauce, fish sauce, return the beef to the pan toss over a high heat season with a good pinch of salt and pepper and pour over the lime juice.

I think this is a really healthy and easy midweek meal to feed your family and so full of colour you can adapt this by adding chicken if you prefer and perhaps a few different vegetables, again you can play with it till you find something you like.
