Lemon & Elderflower Loaf

After making that wonderful cake at the weekend I thought I would try out my new loaf tin from Kitchen Aid. And I love a quick simple loaf it’s an all in recipe and then to the oven for the rest easy.

Printable recipe lemon and elderflower loaf

Ingredients

100g butter soft stork I use

175g caster sugar

2 large eggs

225g self raising flour

1 level tea spoon baking powder

1 grated lemon zest

2 table spoons of elderflower cordial

 

For the crunchy topping

 100g granulated sugar

Juice of 1 lemon

1 tbsp elderflower cordial

 

Pre heat the oven to 180’ fan 160’ and line a loaf tin with baking paper.

Place all your ingredients into a free standing mixer and beat for around 2- 3 minutes once you have a lovely batter mixture place it into your prepared loaf tin and bake in the oven for 40 mins.

Mean while make the crunchy topping by adding the juice and cordial to the sugar in a bowl and mix altogether.

Once its firm to touch and golden remove from the oven and leave it in the tin and pour your sugar mixture all over and allow to cool down then you can take it out of the tin.
