My Mac and Cheese

This is not your usual Macaroni cheese I’ve added a few more flavours and depths to make it more interesting, My Kids love it which I’m sure you will too.

 

Here we go

You will need

Basic cheese sauce 

50g butter

60g plain flour

500ml milk

300g grated cheese

For the macaroni  its self

500g macaroni

1tsp oil

1 large onion chopped

1 red pepper sliced

250g chorizo sliced

1 clove of garlic crushed

1 tsp fresh or dried thyme

400g can of tomatoes chopped

salt and pepper

150g grated cheese

50g breadcrumbs

50g grated cheese

Now you have all that you can now begin

Make the cheese sauce,

Melt the butter in a saucepan then add the flour for a min to come together it will look like a wet dough then slowly add your milk a little at a time till it combines and thickens nicely. Remove from the heat,  add your cheese and allow to melt and come together.

Place to once side and bring a large pan of water to the boil and cook your macaroni according to the packet, Normally 10 mins or so till its soft and tender.

Meanwhile add the oil to a large frying pan and add your onions and red pepper and cover loosely with some foil or if you have a lid great. Cook them gently until there nice and soft will take around 5 mins.

Add the garlic and chorizo to the pan and cook for a further 1min now time for the thyme, tomatoes and salt and pepper.  Give it all a really good stir and allow the mix to come to the boil and then let simmer for 20 – 25 mins until its nice a thick and like a relish.

Pre heat your grill to medium setting.

Now your macaroni should be cooked place it into a large ovenproof bowl along with the cheese sauce mix all in then scatter the tomato relish along the top and stir to coat all the pasta, Then finally tip your breadcrumbs all over along with the remaining cheese and place under the grill till all golden.

Serve with a green salad or on its own whichever you prefer.
