Three ways with chicken on a budget

The title of this blog post says it all, What you can do with one large chicken.

I bought a 5 lb. 4 oz Large chicken from my local Butchers, and it has provided my family with 2 meals and one lunch.

  1. I did a family roast chicken with thyme and lemon for the Sunday

A good handful of fresh thyme leaves along with half a grated lemon mix altogether with some butter enough to rub all over your chicken and some to place between the skin and breast of the chicken, I use around 50g of butter.


2. Chicken soup

strip the entire roast chicken and place the leftover chicken on a plate and then place all the bones into a large pan of cold water around a 1 litre of water or just enough to cover your chicken body and bones, add 1 onion roughly chopped with the skin on, 1 large carrot cut in three, 1 stick of celery chopped into 3, 1 bay leaf,


bring to the boil then simmer for around 40 mins,

I always do mine straight after dinner whilst I’m cleaning the kitchen down, I always leave it to go cold in the pan I did it in then once cold pop it in the fridge till the morning.

I then skim off any fat with a spoon, then using a sieve and another pan I strain through all the bones and vegtables then throw them away your then left with a chicken stock.

You then get a large pan along with a knob of butter allow to heat and melt add 1 tbsp of plain flour mix together then slowly add your stock to the pan and it will thicken nicely. (like making a white sauce) once you have all your stock in the pan add any left over gravy and stir till its all combined. (thats why mines a little darker)Add a good pinch of salt and pepper, and a pinch of nutmeg. Then serve with crusty bread. This will do a good 4-6 people for lunch.



3. Left over chicken and tomato pasta


Begin by adding 1 onion chopped to a pan with some oil. Then a little crushed garlic, them leaves add all your left over chicken and cook till warmed through and pipping hot. Then add x1 tin of chopped tomatoes (if you have fresh tomato sauce in the freezer use that) make a tomato sauce buy bringing all that together, adding a good pinch of salt and pepper. I like to add half a tub of Philadelphia cheese to my tomato sauce for a creamy taste

Cook your pasta as the packet tells you. Now pour the chicken tomato sauce into a large oven proof dish along with the cooked pasta followed by a good grating of strong cheese.
