We love fajitas in my house especially when you can fill each wrap yourself etc but as it’s a mid week meal and we don’t have as much time sometimes to sit around the table. I thought I would adapt this to make it a quick meal so we can still eat and enjoy it around the table with everyone. And I can sneak more vegetables in their if I want a win win.
You will need
6 tortilla wraps
a splash of oil
1 red onion diced
1 red pepper
1 orange/yellow pepper
1 tin of chopped tomatoes
3 chicken breasts diced into strips or cubes your choice
1 tbsp Fajita spice mix ( you can buy it from the spice mixes in the supermarket)
salt and pepper
150g of matter cheddar cheese grated
Begin by turning the oven on to 180’c
Get a large pan and add the oil, Then the onions and peppers allow to cook for around 5 minutes.
Add the fajita spice mix and mix altogether, Now add the chicken and make sure all the fajita spice is coated the chicken well cook for a further 10 mins until your chicken is nearly cooked and browned.
Now add your tomatoes along with a good pinch of salt and pepper. Mix altogether till all nicely combined and allow to simmer gently for a further 10 mins or until your sauce has thicken and reduced and your chicken is cooked.
Now your ready to put it together using a large ovenproof dish fill each wrap and fold and place into the dish with the seal facing down, do this for all the wraps and chicken. Sprinkle all the cheese all over the wraps and bake in the oven for 15 mins just so your cheese is nicely melted and starting to crisp up.
There you have it a very simple recipe anyone can make and you can play around with the ingriedents too.
I served mine with a salad and some garlic bread only because it needed eating up.
